To automatically delete all browsing data when exiting the Chrome browser, including history, you can use the extension Click&Clean per Chrome.

Once the installation is complete, click on the Click & Clan button (a white “C” with a red background) that has been added next to the address bar.
Then select the button options
then in the section Extras check the item in the new window displayed on the screen Delete personal data when Chrome closes.
Done! From now on, every time you close Google Chrome, the history and all other browsing data will be automatically deleted.
Note: for safety when you close chrome on Windows 10 make sure there is no Chrome icon in the windows bar. If present, right-click on it and from the menu that appears select exit.
